You have to choose the role before composing. To do this, I use '#' 
instead of 'C' to start the composition. I think you have to enable the 
'alternate compose menu' to get that command, but I'm not sure of that. 
(That might not be the only way to do it, but I think it makes more sense 
than the typical 'C' path.)

Also note that if you postpone a message, it will retain the same role it 
was started with. (e.g. for SMTP server settings)
