There is no way to define shortcut keys. It may not be exactly relevant,
but there is an example in the help explaining how to use bogofilter with
alpine. It may be out of date now, not sure. Find it by going into a
filter config screen for a particular filter and move to the Categorizer
command and look at the help. Down near the bottom is another link to the
example.
