Natural World Elective

Nutritional Sciences Program and Department of Epidemiology

Prerequisites: None

This course examines the many facets of the modern food supply from production
and processing to distribution, marketing and retail. This systems approach to
food studies will consider geopolitical, agricultural, environmental, social
and economic factors along the pathway from harvest to health. The course will
also explore socioeconomic inequities in access to healthy foods and the impact
of nutrition policies and programs on population health.
