In addition to the Nitzke and McCabe citations, see
Ruud J. Developing written nutrition information for adults with low
literacy skills. JNE 1993: 25:11-16.

Also, Ross Labs sponsored a roundtable on current issues in public health in
1989 that dealt with strategies to help clients with limited reading skills.
Cecelia and Leonard Doak have published in this area and now run a
consulting firm in Potomac, Maryland called Patient Learning Associates.
They co-chaired the roundtable.
The monograph published that summarized the roundtable was very helpful when
I was working on developing materials for HIV+ clients a few years ago. You
