Subject: nutritional reference needed

Hello. Recently the Polio net has been discussing nutrition and nutrients.
The current set of questions are around caffeine, decaf and water. Is there
a good nutrition reference source either on the net.....they love to look
stuff up on the net, or a book that discusses in plain english how the body
uses nutrients. For some of the discussions I feel able to answer questions
and have old texts, but this caffein vs decaf discussion has quickly moved
beyond the reference materials I have. So does anyone have some suggestions.

This is for an international group of adults, with varying degrees of
physical disability related to the Polio they had 20-50 years ago and new
polio related symptoms and limitations. They are on the internet, those
young enough and able enough are still working. They operate as a support
group sharing info and experience with disability. Because of physical
limitations most are weight and exercise concious, so nutrition is an
ongoing thread. Any ideas will be appreciated. Penny
