how to collect accurate dietary informat

I am writing a module for WIC paraprofessionals on dietary assessment.  I 
wanted to include tips for collecting accurate information from 24 hour diet 
recalls and food frequencies.   For examples, avoid leading questions, use 
open ended questions, be nonjudgemental, etc.  Does anyone have any 
suggestions of any good resources?   Can anyone recommend a good training 
video for paraprofessional on diet assessment
