  I would like to find out if you have any advice/suggestions/ideas for good books/texts or resources on nutrition counseling (even continuing education courses/seminars) that would be appropriate for an undergraduate nutrition counseling course. 
  Also, if you have used successfully or participated in simulated experiences or other counseling application approaches (eg standardized pts), I would be quite interested to hear about them.
