international nutrition opportunities

Hello!

I am a senior at the University of Texas at Austin and will graduate in May
with a B.S. in Nutrition. I am really interested in using my degree in
another country for a year or two (such as providing nutrition education)
before I settle into a full time job. Does anyone know of any programs/
opportunities such as the Peace Corps? Does anyone know of a Registered
Dietitian who traveled with the Peace Corps that I can contact?
