Hi, Dawn,
If there is a particular country in which you hope to work, you might
want to get in touch with the American International Dietetic
Association. This is group represents members of ADA living outside the
U.S. In the last few years they have set up a network of country
representatives who may be able to help answer your questions. I don't
have a contact address, but ADA will surely have that information.
If joining the Peace Corps is what you have in mind, perhaps someone on
this listserv with that experience will be able to help you out (or
contact Peace Corps directly).
