cooking 101 information???

Dear PHNUTR-L Subscribers

Has anyone seen a non-commercial web site with Cooking 101 information in
picture (step-by-step photographs or drawings accompanied by text) or online
video? I've found a few on commercial sites but multiple advertisements
flash when you pull them up. Topics such as how to chop vegetables, cutting
up a chicken, measure flour, etc. I'm also looking for an online cooking
equipment substitution list (if you don't have a rolling pin...use a heavy
jar etc).
