Safe Food and You - Food Safety During Pregnancy

We are pleased to share with you the results of the Food Safety and
Quality Initiative Competitive Project, "Food safety for pregnant women
and parents of small children,which culminated in the curriculum, "Safe
Food and You". Complimentary video kits have been sent to the Food
Safety contacts at each land-grant institution and should arrive
shortly.

This was a collaborative project involving Purdue University and Iowa
State University, their EFNEP, FSNEP and Cooperative Extension programs.

The initial needs assessment indicated that high risk, hard to reach
audiences 
such as pregnant women and parents of small children have a specific
need for food safety education.  

The curriculum is based on the Fight Bac! concepts of Clean, Separate,
Cook and Chill.  The mothers-to-be portion utilized a video along with a
lesson plan.  This lesson can be adapted to any nutrition program for
pregnant women throughout the country.  Participants in the initial
portion of the program were given instant-read or refrigerator
thermometers to reinforce the concepts taught. The parents and
preschoolers portion utilized a CD of handwashing songs along with
activities for parent and child to do together.  Each lesson contains an
evaluation component. 

Topics include:
·	Fight Bac! concepts of Clean, Separate, Cook and Chill
		for pregnant adolescents and adults as well as parents
·	Listeria monocytogenes prevention strategies for pregnant
adolescents and adults
·	Focus on handwashing with young children

Pregnant adolescents and adults (one lesson):

Parents and preschoolers (one lesson):

parents

Handouts will be available in Spanish in early 2002.
