Any IMAP server which supports multiple connections to the same IMAP
folder should work fine. However with the default unix mbox format and
UW-IMAP server, only one process can hold the lock on a folder. I know
that Cyrus-IMAP supports simultaneous access to the same folder, but I
can't tell you about other IMAP servers or backends.
